Silver beet & green lentil soup

one large bunch silver beet(green swiss chard) chopped1/2 cup green lentils rinsed1 medium potato cubed2 medium onions sliced4 cups waterOlive oil garnish4 cloves garlic finely chopped1 small onion finely chopped1 tbsp dried mint or 1/2 cup fresh mint2 tsp salt1/3 cup olive oil Place water, onions, potatoes & lentils in a pot and bring to a low boil.Once the potatoes are almost cooked, add the silver beets.In another pan, heat olive oil and sauté the onions until soft and lightly golden.Add mint, salt & fry for 30-45 seconds.Finally, add garlic, sauté for 30 seconds or until fragrant and add to the soup.Allow the soup to simmer for about 15-20 minutes with the garnish.Serve hot with lemon wedges.
