Broccoli soup with Cashew cream

1/4 cup olive oil1 onion chopped2 large cloves garlic, chopped1 carrot chopped2 stalks of celery chopped4 cups of broccoli & stalks1 1/2 tbsp fresh basil1 cup cashews blended with 1 cup water4 cups vegetable or chicken stocksea salt & black pepper to taste Saute onions in olive oil until soft.Add garlic, carrots, celery, salt & pepper and fry until vegetable are soft, act 5-6 mins.Add broccoli, fry for 2 mins, until it turns bright green and add stock.Cover and bring to boil. Once it starts to boil, add the fresh basil and 1/2 cup cashew cream.Simmer for 5 mins. Check seasoning and add more cream if desired.Drizzle with olive oil & cashew cream. Serve hot
